| Vinification | After harvest, the freshly picked grapes are brought to the winery and destemmed. This is followed by gentle pressing. The free-run must obtained, with the addition of selected yeasts, undergoes fermentation at a controlled temperature between 16° and 18°C. The subsequent secondary fermentation takes place using the Charmat Method over approximately 60 days. |
Other curiosities
Bright straw yellow in color, with greenish reflections and a fine, continuous perlage. On the nose, it expresses notes of green apple, crunchy pear and white flowers, with delicate citrus nuances. The palate is dry, taut and fresh, supported by lively acidity and a creamy mousse. The finish is clean, crisp and persistent, with citrus and savory notes.
